This cheese has roots deeply entwined with the history of the region, once a staple in the diet of miners at the Monsacro Mine—also famed for safeguarding the sacred relics of the Kingdom of Asturias from the Berber invasion, now treasured in the cathedral of Oviedo.
Our Rey Silo Red begins as our classic Rey Silo White. After initial molding, it is carefully mixed with naturally sun-dried Murcia paprika, giving it a distinctive salmon hue and a subtly spicy aftertaste. It is then remolded into its unique conical shape to allow gravity to complete the whey-draining process.
Matured with Geotricum mold, this cheese boasts a strong salmon-colored interior with a granular texture. Enjoy a piece of Asturian legacy with every bite of this lightly spicy, exquisite cheese.
